  • Prepare the base

    Prepare the sorbet

    Mix the red bell pepper and strawberry base with the lemon juice, salt, and sugars, setting aside the stabilizer and sucrose to be mixed in later.

    Place on the stove. When the mixture reaches approximately 40 °C, add the stabilizer and sucrose mixture and stir well with a whisk.

    Bring the mixture back up to 75 °C.

    Remove from the heat, stir in the pepper, and blend until smooth.

    Let it set in the refrigerator for about 6 hours before churning it in the ice cream maker.
