An irresistible classic
Strawberries and cream are much more than just a dessert; they are a perfect combination of freshness, sweetness and smoothness that has conquered palates around the world. Our ambassador Ricard Martinez gives a surprising twist to this classic.
STRAWBERRY AND VINEGAR SOUP
Put all the ingredients in a bowl and strain well.
Put in the microwave for 4 minutes at maximum power.
Leave in the fridge for 12 hours.
Strain the result and reserve for plating.
STRAWBERRY VEIL
Dissolve the sugar and the agar in the water.
Bring to the boil. Remove from heat.
Incorporate the previously hydrated gelatin and the rest of the ingredients (pulp + vinegar).
Quickly spread on a plate to obtain a very thin veil.
Let cool to gel.
Cut as needed.
