We carry out a calibration and a fire peeling that removes all the skin.

Our main ingredient in this puree is Castanea Sativa Mill, the nutritious fruit of the chestnut tree, similar in size to a walnut and with a thick, leathery, dark brown shell. In autumn, we select the best chestnuts from Galicia and the Bierzo Valley. Although they tend to be smaller and more difficult to peel compared to those from other regions, they are noticeably sweeter. We carry out a meticulous process of calibration and fire peeling to completely remove the skin. With these chestnuts, in Arotz we create delicious sub-products, such as our natural chestnut puree, sweet creams and vacuum cooked chestnuts.

Organoleptic Characteristics

Color: typical chestnut brown (medium tone).
Smell: characteristic of this nut.
Flavor: sweetened chestnut.
Texture/consistency: homogeneous and creamy but with a good consistency.

Storage Conditions

The proven shelf life of our product is 30 months when kept in its original packaging and stored frozen at -20ºC. once thawed, the product should never be refrozen to ensure its quality and food safety.
It is important to remember that the product should be thawed under refrigeration (2 to 5ºC) and kept at this temperature until fully consumed. It is recommended to be consumed within a maximum of 4 to 5 days to preserve its organoleptic properties and ensure its freshness.
